An Exciting new vision for midwest Beef
Who We Are
Fellers Ranch® is a partnership between an 89 year-old family-owned (USDA-inspected) artisan butcher shop, and several seasoned ranchers. Together, we have an exciting new vision. That vision is based on decades of raising cattle and processing meat. We are all located in south-central Minnesota, which is where our cattle are raised.
Fellers Ranch® produces the highest quality Wagyu beef in the Midwest. Our cattle are fed a custom diet and are raised in a low stress environment . Following 14 days of dry aging, the result is amazing tenderness, marbling, and flavor.
We are family farmers, and we support small business. Fellers Ranch® does not utilize commercial feedlots or corporate processing plants.
We believe that the best breeding, calving, raising, processing, and delivery is done by local people that we know and trust.
Tremendous flavor and marbling
Beef connoisseurs across the globe appreciate Wagyu for exceptional marbling and unmatched flavor. Like all top-quality Wagyu, our cattle are raised at a slow pace, in a low stress environment, with a special diet. Wagyu takes almost twice as long to raise as feedlot livestock.
Numerous studies show that Wagyu is among the healthiest of all beef produced. Wagyu contains higher levels of monounsaturated (“good”) fat and oleic acid than other beef. Not only does Wagyu provide tremendous flavor and tenderness, but it can also be an integral part of a healthy, well-balanced diet.
Commercial feedlots are all about maximizing feed intake and quick delivery to the slaughtering plant. That is not us! We are all about stress-free, healthy animal growth, resulting in tremendous flavor and marbling.
preparing the best wagyu
The unsaturated fats that give Wagyu its world-renowned marbling and tenderness can melt quickly. Therefore, Wagyu should be cooked at higher temperatures, but with less time on the grill or stove top.
When grilling, a solid grill plate is suggested rather than an open grate directly over the flame. This reduces the loss of intramuscular fats, which is what gives Wagyu its excellent flavor and tenderness. Fellers Ranch® recommends bringing Wagyu to room temperature prior to placing it on the heating surface. We also suggest smaller cuts to promote more rapid, even cooking.
